Pansit palabok is one of the most popular noodle dishes in the Philippines. Its rich sauce, made with shrimp stock and a thick, oil-based sauce, coats the vermicelli noodles, which are topped with pork, tofu, shrimp, hard-boiled eggs, and smoked fish.

Directions

  1. Boil some water in a pot.
  2. Place the soybean sprouts in a sieve and arrange the vermicelli on top. ≈ 3 min
  3. Submerge them in the hot water and let them soften.
  4. Drain. ≈ 2 min
  5. Pour in onto a large dish. ≈ 3 min
  6. In a pot, heat the oil paint with the varnish.
  7. Cook until the seeds pop and the oil turns red.
  8. Pour the in the shrimp broth and bring to a boil.
  9. Whisk the flour into the water. ≈ 4 min
  10. Pour in the sifted flour. ≈ 3 min
  11. Let it simmer until the sauce thickens.
  12. Season with salt and pepper to your liking. ≈ 2 min
  13. Pour the sauce over the vermicelli. ≈ 3 min
  14. Arrange the meat and tofu over the vermicelli noodles. ≈ 3 min
  15. Garnish with smoked fish and slices of pork. ≈ 2 min
  16. Decorate with fresh onions and fried garlic.
  17. Serve with lime. ≈ 2 min
