“Bisschopswijn,” literally “bishop’s wine,” is traditionally served on the evening of St. Nicholas' Day. This Dutch variation of mulled wine is distinguished by the use of orange, which replaces the other citrus fruits.

Directions
- Pour the orange juice into a pot with the cinnamon sticks, vanilla pod, and cloves. ≈ 3 min
- Bring almost to a boil, then add the cognac and juniper.
- Add sugar to your liking. ≈ 3 min
- Stir occasionally until the sugar is completely dissolved.
- Next, filter the liquid through a larger container. ≈ 3 min
- Add the wine and heat over low heat.
- Serve the Bisschopswijn in teacups. ≈ 2 min
