- Walnuts should be harvested in the morning, and traditionally, on the day of Saint John, which is June 24th. ≈ 3 min
- However, depending on the progress of the season, it may be necessary to begin harvesting a few days earlier. ≈ 3 min
- To determine the ideal time, simply try to cut a walnut with a knife: the hard shell inside the walnut should not have formed yet. ≈ 8 min
- Wash the walnuts and let them drain for a few minutes, then chop them into 4 pieces and place them in a 2-liter glass jar. ≈ 8 min
- Add the grappa and the zest of a quarter of a lemon, making sure to only remove the yellow part of the lemon. ≈ 3 min
- Add the peppercorns and a small amount of cinnamon, then seal the jar tightly and place it in a sunny spot. ≈ 3 min
- Leave the pot exposed to the sun for 4 weeks, shaking it daily. ≈ 3 min
