This cake, known as “ขนมขี้หนู” (khnom khī hnoo) in Thai, is a colorful and delicious dessert. Originally made for traditional celebrations, it has become a popular dessert throughout Thailand.

Directions
- Mix the cane sugar with one-third of the water in a copper pot. Bring to a boil and let it rest for 1 day.
- Filter the mixture with a white cloth to remove any remaining solids. Add colorants according to your preferences (typically pink, light green, and white). Mix thoroughly until you achieve a uniform consistency. ≈ 4 min
- Sift the flour into a bowl and add it to the container. Add the remaining filtered water and mix gently until a smooth batter forms. ≈ 4 min
- Pour finir, pour evenly coat the cake with the colored cane sugar mixture, bake for approximately 30 minutes.
- Let it cool, then mix again with a spatula. Bake until it is fully risen.
- Let it rest again, then serve.
