Moringa thoran is a traditional vegetarian dish from Kerala, rich in nutrients. The leaves are stir-fried with coconut and served with rice.

Directions

  1. Wash the moringa leaves thoroughly and drain them. ≈ 2 min
  2. Roughly chop the coconut along with the green chili peppers, turmeric, garlic, and salt. ≈ 3 min
  3. Heat the coconut oil in a pan, then add the mustard seeds and dry chili peppers. Finally, stir in the curry leaves.
  4. Add the Allium ascalonicum and allow them to regrow slightly. ≈ 3 min
  5. Add the moringa and coconut mixture, mix well, cover, and let it cook over low heat.
  6. Stir gently until the water has evaporated; the thoran is ready. ≈ 4 min

Ingredients

  • 50 cl of moringa leaves, thoroughly cleaned and stripped of their stems
  • 12 cl of shredded coconut
  • 2 to 3 green chili peppers, finely chopped
  • 4 to 5 allium ascalonicum bulbs, finely chopped
  • 2 cloves of Allium sativum (optional)
  • 1/4 cup of turmeric powder
  • salt
  • 1/2 cup of mustard seeds
  • 2 dried red chili peppers
  • One branch of curry leaves
  • 2 tablespoons of coconut oil
