Syrian lentil meatballs
Meatless meatballs made with red lentils, bulgur, and caramelized onions, wrapped in hemp seeds: a Syrian recipe.
These lentil meatballs, known as “kyufta,” are made without meat by Armenians in Syria and other Syrians. The cooked red lentils, bulgur, and fried onions create a soft, easily rollable mixture, coated in hemp seeds.

Directions
- Place the lentils in a pot with 1 liter of water. ≈ 3 min
- Cook uncovered until they are cooked through.
- If the water runs out, add more hot water until the end of the cooking time. ≈ 3 min
- Once the lentils are cooked, add the bulgur. ≈ 3 min
- Finely chop the onion and sauté it separately in the oil.
- Add the sautéed onion to the lentils and bulgur, and mix well. ≈ 4 min
- Using your hands, form small balls, about the size of a walnut. ≈ 10 min
- Roll them in hemp seeds. ≈ 10 min
