Dragonbiffar, ground beef seasoned with tarragon
Small Swedish-style ground beef patties, seasoned with tarragon, bound with starch and egg yolk, served with a cream and soy sauce sauce.
In Swedish, “dragon” refers to tarragon: these small, minced pieces owe their anise-like flavor to the herb, which is further enhanced by a quick deglazing sauce.
