Directions
- Take the meat out of the refrigerator about 30 minutes before cooking, so it’s not too cold. Cut it into thin slices and gently flatten each slice. Remove the nerves, fat, and membranes (these can be used to make a broth). Brush with the marinade and let it sit for a few minutes.
- Heat the bacon in a frying pan until it is very hot. Sear the steaks very briefly, just to brown the surface, turning them three times, including on the edges. Place them in a baking dish. Pour the bacon fat from the frying pan into the sauce. ≈ 3 min
- Preheat the oven, then place the steaks in the oven and cook them for 12 minutes: 10 minutes for a slightly pink interior, and 14 minutes for a more well-done interior.
- For the sauce, sauté the finely chopped onions in the oil with the herbs, adding just a little water. When they soften, add the finely chopped apples and cook for a few more minutes. Don’t add the apples at the beginning; they would release water and the onions would remain hard.
- Serve the steaks with the onion-apple sauce. ≈ 2 min
