This Polish marinade flavors the herring with cloves, juniper berries, and mustard. With a little patience, this dish can be served very fresh.

Directions
- Wash the herring, cut them into 3-4 cm pieces, and arrange them in layers in a large jar. ≈ 8 min
- Sprinkle each layer with crushed spices, drizzle with lemon juice and oil paint, and then add sliced onions. Top with strips of blanched lemon zest. ≈ 2 min
- Let it rest for 2 to 3 days in a cool place.
- One hour before serving, remove the herring from the refrigerator and drain any excess liquid. Dice the onions, season them with sugar, and place them in the refrigerator.
- Arrange the herring on a platter, garnish with onions, and keep chilled until serving.
