Directions

  1. Combine the flour, butter in small pieces, and eggs in a food processor until a dough forms. ≈ 4 min
  2. Roll out the dough in a tart tin that is approximately 22 cm in diameter. ≈ 3 min
  3. Let it rest in the refrigerator for about 15 minutes.
  4. Preheat the oven to 225 °C.
  5. Prepare the base of your pie. ≈ 3 min
  6. You can also place a circle of aluminum foil around the edge of the tart to help keep it in place. ≈ 3 min
  7. Bake in the center of the oven for approximately 15 minutes.
  8. Next, reduce the oven temperature to 150°.
  9. Prepare the filling. ≈ 3 min
  10. Peel both mangoes and remove the flesh from each fruit, separating it from the pit. ≈ 8 min
  11. Cut one of the mangoes into slices or chunks and arrange them in the bottom of the tart. ≈ 8 min
  12. Prepare the filling in a blender. ≈ 3 min
  13. Mix the cornstarch with a tablespoon of juice in a bowl. ≈ 4 min
  14. Add the remaining juice, sugar, and mango puree. ≈ 3 min
  15. Simmer, stirring occasionally.
  16. Add the egg yolks and continue to simmer at a very low temperature, stirring until the cream thickens.
  17. Spread the cream evenly in the tart tin. ≈ 3 min
  18. Prepare the meringue. ≈ 3 min
  19. Combine the egg whites, sugar, and vinegar in a bowl, preferably one made of metal. ≈ 4 min
  20. Place the bowl over a simmering pot of water, and whisk for 5 to 10 minutes, ideally using an electric hand mixer, until the meringue thickens.
  21. Remove the bowl from the heat and continue to whip until the meringue is thick, glossy, and slightly cooled.
  22. You can sprinkle with shredded coconut. ≈ 2 min
  23. Spread the meringue over the top of the tart. ≈ 4 min
  24. Bake in the center of the oven for 35-40 minutes.
  25. Let it cool.
  26. Sprinkle with powdered sugar and serve. ≈ 2 min
