Directions
- Wash and poach the apples in salted water, then puree them using a food processor or by mashing them with a fork.
- Place the resulting puree in a mixing bowl, and add one egg, parsley, cilantro, and crushed garlic. ≈ 3 min
- Salt, pepper, and mix everything together. ≈ 4 min
- Form small meatballs using the mashed potatoes, and gently flatten them with your fingers. ≈ 3 min
- Dip each one in a bowl containing beaten eggs and flour, coating both sides.
- Be sure to remove any excess flour by gently tapping the maakoudas. ≈ 3 min
- In a very hot frying pan, place the ma’akoudas and fry on both sides until golden brown.
