The Lorraine potée is a signature dish of Belgian cuisine. It combines meats and vegetables for a complete meal, served in two stages: first, a soup with grilled bread slices, followed by vegetables topped with sausages.

Directions
- Preparation time: 30 minutes
- Cooking time: 1 hour 50 minutes
- Expected time: 12:00 PM
- Soak the beans in cold water (for 12 hours).
- Place them in a large pot with the onion and the herb bundle. ≈ 3 min
- Add water, bring to a boil, then skim off any foam.
- Simmer the water for 1 hour and 50 minutes.
- Peel the carrots and the turnips. ≈ 8 min
- Wash the leeks, and tie them together. ≈ 8 min
- Add these vegetables, the sausages, and the bacon after 1 hour of cooking.
- Blanch the cabbage leaves for 2 minutes in boiling, salted water.
- Peel the apples. ≈ 8 min
- Cook them for 20 minutes.
- Serve the potée hot, along with the root vegetables, and pour with broth.
