Directions
- Clean and scale the lobarro, leaving the skin on. Season it with fine salt and place it in a baking dish or on a baking sheet with pieces of butter.
- Pour assaisonner, use lemon juice, then add a splash of dry white wine. Bake in the oven for 30 to 40 minutes, basting regularly with the pan juices.
- Once cooked to the desired doneness and removed from the oven, place it on a plate, taking care not to break it. Cover it with the hot Catalan salsa and garnish with well-washed lettuce leaves or escarole leaves.
