Directions

  1. In a large pot, heat the oil over medium heat. Add the onion and garlic, and cook until the onion becomes translucent.
  2. Add the carrots, zucchini, bell pepper, and green beans. Stir and cook for a few minutes, until they begin to soften.
  3. Add the tomatoes, chickpeas, cumin, cilantro, turmeric, paprika, salt, and pepper. Mix well to coat the vegetables with the spices. ≈ 4 min
  4. Pour the in the pot, bring to a boil, then reduce the heat. Cover and simmer for 15 to 20 minutes, or until the vegetables are tender.
  5. While you’re doing that, prepare the semolina according to the package instructions, either by steaming or cooking it in hot water, then drain it with a fork.
  6. Once the vegetables are cooked, gently stir in the semolina. Taste and adjust the seasoning as needed. ≈ 4 min
  7. Serve hot, garnished with fresh parsley or cilantro. ≈ 2 min
