Directions
- Prepare the shortcrust pastry: mix the flour with the softened butter, then add the water and work the dough until a smooth, even dough forms. ≈ 4 min
- Divide the dough into 20 evenly sized discs and refrigerate for 30 minutes.
- Prepare the pastry cream: whisk together the egg yolks and powdered sugar, then pour in the brewed coffee. Cook and let cool.
- Line a baking sheet with parchment paper and unroll 2 to 3 sheets of shortcrust pastry. Spread the pastry cream evenly over the pastry and cover with another sheet of pastry. ≈ 3 min
- Repeat the process until all the pasta is used. Finally, top the last disc with cream and sprinkle with powdered sugar. ≈ 10 min
- Decorate with cream or ganache, using a piping bag.
