Lapskaus is a traditional dish from northern Germany and Poland. It consists of meat (often beef or pork), root vegetables, and various vegetables cooked slowly in a stew. This dish keeps well and can be prepared in advance.

Directions

  1. Bring the water to a boil, then add the meat, salt, and onion.
  2. Let it simmer for 30 minutes.
  3. Remove the foam. ≈ 3 min
  4. Wash, clean, and cut the apples and vegetables. ≈ 8 min
  5. Add potatoes, carrots, cabbage, and celery to the pot with the meat. ≈ 3 min
  6. The cooking process continues until the root vegetables are almost tender, about 15 minutes.
  7. Add finely mashed potatoes and simmer for 5 minutes.
  8. Add pepper, and if you like, a little more salt. ≈ 3 min
  9. Sprinkle with roughly chopped parsley just before serving. ≈ 2 min
  10. Boil the water and add the salt.
  11. Soak the meat in cold water and let it rest.
  12. Bring to a boil and remove the foam.
  13. The meat should be cooked covered, over low heat, for approximately 1.5 hours.
  14. Peel the vegetables and the potatoes, then chop them into small cubes. ≈ 8 min
  15. Remove the meat from its shell and cut it into small pieces. ≈ 8 min
  16. Add the meat and vegetables to the pot and cook until everything is tender, about 25 minutes.
  17. Do not cook until the mixture reaches a smooth, mashed consistency.
  18. Taste and adjust the seasoning with salt. ≈ 2 min
  19. Chop the parsley finely and serve with the pancakes, if desired. ≈ 2 min
