Lamb chops with beetroot and wine sauce
Slow-cooked lamb shanks with beets, carrots, and pearl onions, in a red wine, star anise, and cinnamon sauce.
This lamb dish requires some time to prepare, but it’s relatively easy to make. The lamb ribs are slow-cooked with roasted vegetables in a sauce made with red wine, shallots, and cinnamon.

Directions
- Heat the oil paint in a saucepan.
- Add all the vegetables. If the carrots are large, cut them in half and lightly sauté them. ≈ 8 min
- Add the vinegar, brown sugar, thyme sprigs, salt, and pepper. ≈ 3 min
- Cook and roast the vegetables for 45 minutes, or until they are tender. You can also do this in the oven at 180 °C to keep the vegetables firmer.
- In a separate pot, bring the wine and shallots to a boil. Add the cinnamon, thyme, salt, and pepper, and simmer over low heat until the sauce has reduced by half.
- First, sear the lamb ribs in oil until browned, then add them to the first pot.
- Pour the sauce over the lamb and let it cook for another hour or so, until the lamb is tender.
