Kuzhimanthi, mandi-style smoked chicken rice
The Kerala kuzhimanthi, inspired by the Yemeni mandi: chicken marinated in spices, cooked in a stew with basmati rice, and then smoked over wood charcoal.
Yemeni mandi is traditionally cooked in a pit filled with hot coals. In Kerala, kuzhimanthi has adapted to family-style cooking: chicken marinated and cooked with rice in a tightly sealed pot, with a piece of burning charcoal added at the end to give it a smoky flavor.
