Directions

  1. Place the two bulgur grains together and cover them with lukewarm water, leaving a few centimetres of space. ≈ 3 min
  2. Let it rest for about an hour, until some of the water has been absorbed.
  3. Take the bulgur by handfuls, press it firmly, and place it in another container. Then, discard the remaining water at the bottom. ≈ 3 min
  4. Place all the pressed bulgur in the large bowl, and add 2 cups of semolina, turmeric, salt, and the egg. ≈ 3 min
  5. Knead the dough with your hands, squeezing it firmly until you have a dough that is slightly elastic and sticky; add a little semolina if needed. ≈ 10 min
  6. Make large balls and reserve them. ≈ 10 min
  7. Dig each ball, fill it with a generous spoonful of filling, and seal it. ≈ 10 min
  8. Bring a large saucepan of water to a boil, adding a pinch of salt and turmeric.
  9. Flatten each filled ball into a shape resembling a full moon, about the size of a dinner plate. ≈ 10 min
  10. Gently place them in the boiling water: when the kubbeh rises to the surface, it is cooked.
  11. Serve immediately, or cook them in a frying pan on both sides until golden brown.
