Korola alu chorchori, Bengali bitter melon and potatoes
A simple, everyday Bengali dish: thin slices of eggplant and potato sticks, cooked in a flavorful oil with onions, green chilies, turmeric, and panch phor…
This vegetarian dish, a popular staple in Bengali households, combines the slightly bitter flavor of the margose (a type of leafy green) with the sweetness of potatoes. The vegetables are cooked in their own juices, covered, until they are tender and slightly golden.
