Karantika
A traditional Algerian snack, the Karantika is a savory pie made with chickpea flour.
Karantika, also known as “grantita” in Algiers, is a popular snack, especially in the west of Algeria. The word comes from the Spanish “caliente,” which means “hot.”

Directions
- Place the beans in a large salad bowl. ≈ 3 min
- Add the egg yolk and the whole egg. ≈ 3 min
- Add the melted butter and cumin. ≈ 4 min
- Finally, add the warm water. ≈ 3 min
- Whisk together and let it rest for 10 minutes to allow any lumps to settle.
- Pour the mixture into an anti-stick mould. ≈ 3 min
- Bake for 30 minutes, checking periodically.
- Using a knife, pierce the pie to check for doneness. It should be firm but slightly soft in the center. ≈ 3 min
- Grill it for 5 minutes to brown it.
