Directions

  1. Peel the 200 g of potatoes and cut them into julienne. Grate the Parmesan. Pour 100 ml of sparkling water into a bowl, add an egg and 2 tbsp of flour. Mix until you have a creamy batter. ≈ 8 min
  2. Heat a skillet over the heat and pour in 50 ml of oil. Take a spoon and fill it halfway with the mixture; place it in the oil and gently flatten it with a fork. Repeat until the skillet is full.
  3. Fry everything, and when the pancakes turn golden, transfer them to a plate lined with paper towels. Blot the pancakes dry and sprinkle them with salt.
