Pork stew with mushrooms and sausages
A hearty pork stew with sausages, bell peppers, apples, green peas, and grapes, colored with beetroot oil paint, and finished with grated, melted cheese.
This Filipino stew gets its color from a vegetable oil infused with beetroot. The pork, sausages, bell peppers, potatoes, and green peas simmer together, with grapes added for a touch of sweetness. Melted cheese completes the dish.
