Spanish tortilla is a thick omelette made with potatoes, olive oil, onion, garlic, and paprika. Depending on the region, it may or may not include onion. It can be served hot or cold, as a main course or as an appetizer. Serves 4.

Directions
- Cut the apples into small cubes and cook them gently or lightly fry them.
- Mix them together with the eggs, and add the chopped and fried onion and garlic. ≈ 4 min
- Add the chopped chorizo (or mushrooms), paprika, salt, and pepper. ≈ 3 min
- Pour the mixture into a pan and heat it with the apples.
- Once the top layer has set, apply the gilding to the underside.
- Flip the omelette over and cook the other side until golden brown.
