Directions
- Mix the flour with the water to create a very soft dough, kneading it just enough to form a cohesive mass. ≈ 4 min
- Shape a ball and place it in a salad bowl that is higher than the ball. Cover it generously with water. ≈ 10 min
- Let it rest for about 50 minutes.
- Open a thin film of water, gently lift the dough and begin to work it softly under the water, between your hands. ≈ 3 min
- The starch immediately begins to dissolve and whitens the water. After a while, the sound also starts to dissipate with the water. ≈ 3 min
- When the water becomes less white, increase the flow slightly; when it only produces sound, increase it further. The gluten is ready when, when cut, it is uniform and has no visible holes. ≈ 3 min
- Pour in 1 litre of water into a saucepan with the tamari, kombu, and seitan. ≈ 3 min
- Bring to a boil and simmer for 40 minutes, adding the ginger towards the end of the cooking time.
- Once cooled, store the seitan in the refrigerator in its broth for a few days.
