Rollmops are marinated herring, rolled around a piece of pickle and onion. They are then left to marinate in a spiced vinegar broth for several days before being eaten.

Directions
- Clean the herring, remove the head and fins, rinse them, and dry them. ≈ 8 min
- Prepare a marinade with 250 ml of vinegar, salt, and 220 ml of water, then let the herring marinate in it for 2 to 3 days.
- Bring 600 ml of water to a boil with 100 ml of vinegar, 20 g of salt, sugar, mustard seeds, pepper, and bay leaf. Then, let it cool.
- Open the marinated herring and remove the central spine and tail. ≈ 3 min
- Wrap each strip around a piece of pickle and a piece of raw onion, then secure the rolls with toothpicks. ≈ 10 min
- Place the rolls in a jar with the remaining pickles and onions, cover with the cooled broth, and let them sit for another 4 days.
- Serve alone, or with sautéed apples or a salad of sautéed apples. ≈ 2 min
