Feta is a traditional Greek cheese, typically made from sheep’s milk and aged in brine. This homemade version requires some patience but doesn’t require a lot of equipment.

Directions
- Pour: Pour the milk into a pot and gently heat it at a low temperature. Turn off the heat when the temperature reaches approximately 32 °C.
- Mix the yeast in a small amount of water and pour it into the warm milk. Gently mix, cover, and let it rest at room temperature for about 1 hour.
- Cut the curd into bite-sized pieces using a knife, then let it rest for another 15 minutes to allow the pieces to firm up.
- Transfer the pieces to a cheesecloth-lined sieve to drain off the whey. Tie the fabric and hang it for a few hours to drain. ≈ 2 min
- Place the cut cheese in the brine, made by dissolving 2 tablespoons of salt in 1 liter of water, and let it age in the refrigerator for a few days.
