Guernica’s hot peppers are small, mild green peppers, typical of the Basque region. Quickly fried in a large amount of oil, they become tender and slightly crispy, and then have a satisfying crunch when sprinkled with fleur de sel (a type of sea salt). A perfect appetizer or tapa to be served hot.

Directions
- Wash the hot peppers. ≈ 2 min
- Rinse them thoroughly, then dry them with a dishcloth. ≈ 2 min
- Heat a large amount of oil paint in a pan.
- When the oil is very hot, add the chili peppers. ≈ 3 min
- Fry them for about 1 minute, stirring with a skimmer.
- Place them on a plate lined with absorbent paper. ≈ 3 min
- Add the salt or salt flakes. ≈ 3 min
- Fry in batches, adding a small amount of hot pepper at a time.
- Eat them before they get cold.
