Directions
- Pour the semolina onto the work surface in a mound shape, and sprinkle with fine salt. ≈ 2 min
- Gradually add the lukewarm water and knead for at least 10 minutes.
- Let the dough rest for half an hour.
- Cut the meat into pieces and roll them into sausages about 30 cm long, with a thickness similar to a small finger. Then, cut these into small, regular pieces, about the size of a fingernail. ≈ 10 min
- Crush each piece into small discs using a knife with a rounded tip. ≈ 4 min
- Still using the knife blade, drag the disc across the work surface, applying slight pressure so that it wraps around the blade. ≈ 3 min
- Place the rolled dough on the tip of your thumb and flip it back, as if you were styling a finger, applying pressure in the center to form the dome. ≈ 3 min
- Carefully detach the orecchiette pasta and allow it to dry on a clean work surface for a few hours, with the bowl facing upwards. Cook the pasta for 10 to 15 minutes in boiling, salted water.
