Directions

  1. Remove the shells from the shrimp, keeping the heads and tails. Chop the meat and set aside. ≈ 8 min
  2. Boil the heads and shells in water over low heat until the water turns a reddish color. Strain, measure 1 liter of this broth, and set aside.
  3. Combine the allium ascalonicum, allium sativum, and pepper in a paste, then cook until fragrant. Add the shrimp and cook until it changes color.
  4. Pour the in the shrimp broth, thick coconut milk, and ebi. Stir and bring to a boil.
  5. Season with soy sauce, pepper, salt, and sugar. ≈ 2 min
  6. Mix the flour with a little water, add it to the sauce, and let it thicken. Then, remove from the heat.
  7. Arrange the noodles in the plates. ≈ 3 min
  8. Add the soybean sprouts and hard-boiled eggs. ≈ 3 min
  9. Generously coat with hot sauce. ≈ 3 min
  10. Garnish with celery, French-style fried potatoes, and green onions.
