Directions
- Remove the heads and guts from the fish by opening them up with your fingers instead of using scissors, and be sure to remove the dark membrane from the belly, as this can make the sauce bitter. ≈ 8 min
- Rub them with a little turmeric and salt, and let them sit for 10 minutes: this will reduce their stickiness and make them easier to cook.
- Gently heat the mustard oil in a kadai, then sauté the onion until it turns translucent, but not brown. ≈ 3 min
- Add the garlic paste and cook for 1 minute, without burning it.
- Add the turmeric, chili powder, cumin paste, and salt, and cook over medium heat, adding 2 tablespoons of water if needed, until the oil separates.
- Add the mustard paste and cook for another 2 minutes to mellow its raw flavor.
- Pour the in tamarind juice and bring to a boil again.
- Add the water, reduce the heat to a simmer, and adjust the salt and acidity to taste.
- After 5 minutes, carefully place the fish one at a time, without disturbing them, and cover.
- Cook for 5 to 7 minutes over medium heat, shaking the kadai occasionally by its handles.
- Sprinkle with green chili peppers and cilantro, cover, and cook for 2 minutes. Turn off the heat and let it rest, covered, for 5 minutes.
