Directions
- Thoroughly wash and rinse the spinach and chard, then cook them in a large saucepan with a small amount of water, without draining them too much.
- Squeeze the cooked herbs and coarsely chop them. ≈ 8 min
- In a large saucepan, melt the lard, butter, and optionally a drizzle of oil, then brown for a few minutes a mixture of chopped onion, garlic, and parsley until the onion becomes translucent.
- Add the chopped herbs and cook, stirring occasionally, with a pinch of fine salt.
- Once cooked, transfer them to a serving dish; when they have cooled, add the grated Parmesan, mix, and taste.
- Add a few spoonfuls of fresh ricotta and one egg (two if the filling is very generous). ≈ 3 min
- Thoroughly mix the flour and eggs, then roll out a thin layer (but not too thin) of dough using a rolling pin or a pasta machine. ≈ 10 min
- Cover the portion of the dough that you are not using to prevent it from drying out. ≈ 3 min
- Place a row of small spoonfuls of filling, spaced apart by the width of a tortellini. ≈ 3 min
- Fold the dough and press the edges with your fingers or a fork to seal them tightly, ensuring there is no air inside. ≈ 3 min
- Separate the tortelli using a grater or a knife, cutting the pasta ends to your desired length. ≈ 2 min
- Place them on a well-floured plate and continue until all the dough or filling is used up. ≈ 3 min
- Bring a large pot of water to a boil, then add salt.
- Gently place a few tortelli at a time into the boiling water, ensuring the water isn’t too vigorous. Stir gently with a wooden spoon.
- Cook them for 6 to 10 minutes, depending on how fresh they are; they should remain firm.
- Remove them with a skimmer, drain them, and place them in a casserole dish in layers, rubbing each layer with a piece of butter and sprinkling with grated Parmesan cheese. ≈ 2 min
- Continue cooking the tortelli for another 10 to 15 minutes, until they are cooked through. ≈ 3 min
