Atisara is a popular Filipino pickle made from unripe green papaya. The papaya is first preserved in salt, then covered with a sweet vinegar and stored in jars.

Directions
- Arrange the vegetables evenly on a serving platter. ≈ 4 min
- Brine with coarse salt and let it sit for 2 hours.
- Squeeze out excess water using a cheesecloth. ≈ 2 min
- Divide the vegetables evenly among sterilized jars. ≈ 3 min
- In a bowl, combine the sugar, vinegar, and salt. ≈ 4 min
- Bring to a boil.
- Pour into the jars when the mixture is still hot. ≈ 3 min
- Remove the air bubbles. ≈ 3 min
- Close and store securely. ≈ 3 min
