Directions
- Wash the green grapes, cut them in half, and remove any seeds. Let them macerate in 100 ml of sweet white wine.
- Whip the egg whites until they form soft peaks, then gradually add the sugar and continue whipping until you have stiff peaks (when the bowl is turned upside down, the whites should not fall). ≈ 4 min
- Whip the heavy cream until it forms stiff peaks, then refrigerate.
- Squeeze the half lemon into the remaining wine (100-200 ml), then pour this mixture over the whipped cream. ≈ 3 min
- Gently fold in the whipped cream. ≈ 4 min
- Divide the grapes equally among 6 glasses. Crumble each biscuit into four pieces and place them on top of the grapes, with one biscuit per glass. Drizzle with the soaking liquid, then spoon the cream into each glass. Refrigerate overnight.
