Directions
- Wash the asparagus and cut off the tough ends. ≈ 8 min
- Cut the sticks in half and cook them in lightly salted boiling water with a little caramel for about 8 minutes. Then, drain them.
- Separate the egg whites from the yolks. Whisk together the yolks, wine, flour, and a pinch of salt. Let this mixture rest for about 15 minutes.
- Wash the lemon and dry the leaves. Squeeze the lemon. Wash the watercress and chop it into small pieces. Mix the watercress and the lemon pulp (leaving some aside for decoration). Add salt, pepper, lemon juice, and a pinch of caramel. Garnish with the remaining mixture of watercress and lemon pulp. ≈ 8 min
- Heat the frying oil.
- Separate the egg whites from the yolks. Whip the egg whites to stiff peaks and gently fold them into the batter.
- Wrap the asparagus spears in bacon and then dip them in the batter. ≈ 3 min
- Let the food drain and then fry in portions in the deep-frying oil for about 2 minutes. Drain well.
- Serve the asparagus with the young pea yogurt. ≈ 2 min
