Brazilian apple and Paraná pine nut gnocchi, poached in boiling water and served with a tomato sauce and grated cheese.
These Brazilian gnocchi replace some of the potatoes with ground Paraná pine nuts, which have a flavor similar to chestnuts. They are simply served with a tomato sauce.

Directions
- Cook the apples, mash them, and let them cool.
- Roast the pine nuts until the edges of the shells begin to open.
- Remove the pignons from their shells and pulse them in a food processor. ≈ 2 min
- Add the ground walnuts to the cold apple filling, then incorporate the egg, butter, flour, and salt. ≈ 4 min
- Work the dough, shape it into sausages, and cut them into gnocchi. Boil them in boiling water until they float to the surface.
- Serve with tomato sauce and grated cheese. ≈ 2 min
