Gascon garbure with duck confit
Gasconian bean soup: a hearty peasant soup made with beans, cabbage, turnips, carrots, and apples, enhanced with duck confit or duck and served with bread.
In the Gascon region, garbure was a daily staple at the farm. The vegetables are cooked for a long time, and then the duck confit or goose confit adds richness and flavor; it is considered a successful dish when a spoon can stand upright in the pot.
