Garmsar lamb tahchin
A festive dish from the Semnan province: rice cooked for a very long time in a slow-cooked stew over a bed of ground apples, with raw lamb, lamb fat, spin…
Tahchin from Garmsar, also known as chelow gousht, is one of the oldest festive dishes in central Iran: it is rich, generous, and takes hours to prepare.

Directions
- Soak the rice for 30 minutes, then bring it to a boil in salted water. Place the spinach in a colander where you will drain the rice: it will soften when it comes into contact with the hot water.
- Line the bottom of a large pot with sliced potatoes and drizzle with saffron-infused broth. ≈ 3 min
- Cover with a layer of drained rice, about 5-6 cm thick, followed by the raw, seasoned and spiced meat, seasoned with garlic. Cover with the remaining rice. ≈ 3 min
- Cut the second potato into 3 or 4 pieces and place them on one side of the rice, the spinach on the other, and the rendered fat in the middle. Drizzle with oil and a little water. ≈ 8 min
- Once the rice starts to steam, cover the pot, reduce the heat to a minimum, and let it cook for 2.5 to 3 hours: the meat and the root vegetables will cook in the rice, and the fat will melt.
- It is essential to use lamb or mutton: beef tends to darken in the rice. Using ribs will result in an even better dish. It can also be made with chicken. ≈ 3 min
