Directions
- The previous evening, combine the grapes, fruit zest, walnuts, and brown sugar in a glass bowl. Pour over very strong tea and let it simmer overnight.
- Heat the milk in a saucepan until it is warm, but not boiling, then pour it into a bowl. Add a teaspoon of brown sugar and yeast, and let it sit for 15 minutes (until it has foamed).
- In a separate bowl, combine the flour with 50g of dark brown sugar, 1 teaspoon of salt, and 1 teaspoon of baking soda. ≈ 4 min
- Using a spoon, mix the flour and butter together until a lumpy mixture forms. Continue to mix constantly. ≈ 4 min
- Add the beaten eggs, followed by the milk and yeast mixture. ≈ 3 min
- Create a smooth and elastic dough, cover it with a damp cloth, and let it rest.
- Let the dough rise in a warm place for 90 minutes.
- On a floured surface, place the dough and add the honey, 1/2 cup of liqueur or rum, the spices, and the grape, fruit, and walnut tea mixture. ≈ 3 min
- Knead the dough until the ingredients are well combined. The dough may be a little sticky. ≈ 10 min
- Preheat the oven to 150 °C.
- Place the dough in a lightly oiled metal baking dish, and bake for one to one and a half hours. ≈ 3 min
- Once the pie has turned a dark brown color, remove it from the oven. Allow it to cool slightly before removing it from the pan.
- Place a sheet of metal in the center of the cake during baking to help evaporate excess moisture. ≈ 3 min
- This cake can be eaten warm or cold, and it can be stored in a cool, dry place. It is best to eat it within 48 hours of preparation.
