Directions
- Remove the stems from the tomatoes, peel them, drain the excess water, and remove the seeds between your palms. ≈ 8 min
- Grill the peppers, remove the skin, and cut them into roughly chopped pieces.
- Use a large frying pan and add 3 tablespoons of olive oil.
- Add the crushed garlic, thyme, bay leaf, salt, and pepper (to taste). ≈ 2 min
- Cook for ten minutes, over medium heat.
- Ten minutes later, add the washed, de-seeded, peeled, and chopped tomatoes.
- Cook for 10 minutes, over low heat, covered, until the mixture thickens without stirring.
- The dish should have the consistency of a puree.
- On another burner, fry the pork or lamb chops over high heat in a pan.
- Cooked to perfection. ≈ 3 min
- Serve the meat and fried topping on a plate, ensuring everything is very hot. ≈ 2 min
