This Swiss fondue is made using only Vacherin Fribourgeois cheese. It is very rich and easier to digest than other types of fondue, and is typically served with bread or apples.

Directions
- Cut the cheese into small cubes of a few cubic centimeters and place them in a metal bowl, never in a ceramic one: the heat does not circulate well in ceramic, and the temperature is not evenly distributed. ≈ 8 min
- Add a little warm water (about 1 dl for 1 kg of cheese) and the crushed cloves of Allium sativum, then place the pan over the heat to melt the cheese.
- Stir slowly and continuously with a spatula or large spoon, using circular motions to bring the bottom of the pan towards the surface and distribute the heat evenly. ≈ 4 min
- If the fondue is too thick, add a little warm water, or white wine (or kirsch) at room temperature for a more intense flavour, but do not exceed 1.5 dl per kilogram of cheese: Vacherin cheese does not tolerate the acidity of wine well. ≈ 3 min
- Once the cheese is melted, add pepper to taste and heat thoroughly until a slight steam rises. Serve immediately and enjoy.
