Directions
- Make a syrup by dissolving 20g of sugar in water. ≈ 3 min
- Dilute the starter in lukewarm water. ≈ 4 min
- Create a dough by combining the soft wheat flour, eggs, diluted starter, butter, salt, and sugar, then mix well. ≈ 10 min
- Add the orange blossom water. ≈ 3 min
- Knead until the dough is pliable enough to be mixed by hand without sticking to your fingers, adding more flour if necessary. ≈ 10 min
- Let it rest for 6 hours (minimum) in a bowl covered with a damp cloth, in a cool place; then knead it again a little.
- Let it rise for 1 hour in a covered bowl.
- Make a hole in the center with the palm of your hand, shaping it into a crown so that the heat is distributed evenly. ≈ 3 min
- Let the dough rise. ≈ 3 min
- Gently gild and shape the top, but avoid making it too flat. ≈ 8 min
- Bake for 25-30 minutes at 250 °C until the bread is lightly golden.
- Once the pastry is out of the oven, brush with the syrup, and sprinkle lightly with sugar.
