Flemish hutsepot with pork and winter vegetables
Flemish pot-au-feu: pork (ribs, smoked sausage, feet or tail), simmered in butter, then cooked with carrots, turnips, apples, leeks, onions, and Savoy cab…
Flemish pot-au-feu is a traditional dish from the Flemish region, but it can also be prepared simply as a winter vegetable puree. This dish is easy to make and is perfect for cold winter days. The quantities can be adjusted to your taste and the vegetables available. You can omit the Brussels sprouts if you don’t like them, or add swede for more flavor.

Directions
- Melt the butter in a large saucepan and let it melt and turn golden.
- Brown the meat (you don’t need to use all the ingredients listed; pork is a better choice than beef, and the more meat you use, the more flavorful it will be).
- Cover with water, add salt and pepper, and let simmer for about 1 hour.
- First, add the firm vegetables (turnip, carrot, and parsnip), followed by the onion, leek, and celery. ≈ 3 min
- Add the Savoy cabbage, cut into quarters, last, and simmer until everything is tender.
