Directions
- Mix the flour and water together, starting with a very small amount of water, and then gradually add more until you have a smooth, but not sticky, dough. ≈ 4 min
- Cover the dough and let it rest for at least 5 minutes.
- Divide the dough into balls and roll it out into discs, which should be slightly thicker than denim fabric; sprinkle with flour while rolling. ≈ 10 min
- Place a clean, dry pan on a medium heat and check its temperature by passing your hand over it.
- When the pan is very hot, place a chapati on it and press down on it with a spatula or a dry cloth to make it puff up.
- Turn the item over and repeat the process until both sides are lightly golden. ≈ 3 min
- If desired, brush with ghee. ≈ 4 min
