Directions
- Pour the water into a mixing bowl and gradually add the flour and salt, whisking constantly to prevent lumps from forming. ≈ 3 min
- Let the liquid dough rest for 4 to 12 hours, removing any foam that forms on the surface.
- Generously oil the plate (the thick, copper-plated plate, which retains heat well), and then pour the paste onto it, about 5 mm thick. ≈ 3 min
- Add a little oil and mix well until it coats the dough. Using less oil will result in a drier, more crumbly farinata. ≈ 4 min
- Place in a very hot oven (at least 240 °C), ensuring it is level so that the dough spreads evenly.
- Allow approximately 10 minutes in a wood-fired oven, or about 30 minutes in a standard oven, without opening the door: bubbles should form.
- When the farinata is golden brown and firm, season with pepper and serve immediately. ≈ 2 min
