Directions
- In a saucepan, melt the butter.
- Add the diced carrots and onions, and cook until they are softened and lightly browned. ≈ 3 min

- Come back in about 2-3 minutes, while constantly stirring.
- Add the flour and mix well until you have a smooth, white dough. ≈ 4 min
- Gradually add the milk and vegetable stock, while constantly stirring to prevent lumps from forming.
- Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, stirring occasionally, until the sauce begins to thicken.
- Gradually add the beaten egg yolks, mixing well after each addition. If the sauce is too thin, add another egg yolk. ≈ 3 min
