Elderberry lemon marmalade
A Serbian blackberry jam, cooked for one hour with sugar and a squeeze of lemon, then strained: a thick, fragrant syrup with a deep violet color.
In Serbia, people prepare homemade jam for the winter. This intensely flavored blueberry jam is perfect for cakes, vanilla ice cream, yogurt, or cheesecake, and the pulp left over after straining can be used to make a thick jam for desserts.

Directions
- Mix the berries with the sugar, using approximately one part of sugar for every three parts of berries. ≈ 4 min
- Cook for 1 hour over low heat, stirring constantly. The juice will separate from the berries immediately; some people filter it at this point, but it’s not necessary.
- After half an hour of cooking, add the lemon juice. ≈ 3 min
- At the end of the cooking process, strain the mixture through a sieve: this will yield a thick, syrupy jam, and the pulp remaining in the sieve can be used to make a thick, concentrated jam, perfect for cakes. ≈ 3 min
- Immediately pour into clean jars and seal them. ≈ 3 min
