Directions
- Coat the bacon in gold leaf and remove any excess fat.
- Gild the onions and Allium ascalonicum in butter.
- In a pot, combine the wine, sugar, onions, Allium ascalonicum (leeks), bacon, the herb bouquet, and the clove wrapped in cheesecloth. ≈ 4 min
- Simmer for 30 minutes over medium heat, then remove the bouquet garni.
- Poach the eggs and serve them with a sauce.
