Directions
- Mix the rice flour and buckwheat flour (keeping some buckwheat flour aside to adjust the consistency), with warm water. ≈ 4 min
- Stir until the mixture thickens.
- Let it cool, then knead the dough until it has a smooth texture.
- Lightly dust with buckwheat flour. ≈ 2 min
- Divide the dough into small pieces. ≈ 3 min
- Use your hands to shape each piece into a pointed form, with one sharp end and another more rounded end. ≈ 10 min
- Place the shapes in molds. ≈ 3 min
- Bake the dough in the oven until it is cooked through.
- Roughly crush the coconut by hand to obtain long strands, then cook.
- Once cooked, mix with shredded coconut. ≈ 4 min
- Coconut milk mixed with salt ≈ 3 min
- Toasted and slightly broken sugar roux, mixed with cane sugar.
- To serve, prepare the crepes, cover them with shredded coconut, and sprinkle with sesame seeds (you can also add color to the batter while mixing it). ≈ 2 min
