Directions
- Heat the water with the salt and oil. Once the water boils, gradually add the rice flour and the all-purpose flour, stirring constantly, until a dough forms.
- Once the dough has cooled slightly, knead it by hand until it becomes soft and smooth. Cover it and let it rest for a few minutes.
- In a separate saucepan, cook the shredded coconut with the jaggery to prepare the filling. Once it is dry, remove it from the heat and let it cool.
- Cut small pieces of dough, shape them into balls, and flatten them into discs. Place the filling in the center, fold in half to form a crescent shape, and seal the edges well. ≈ 10 min
- Heat the milk in a saucepan over medium heat until it begins to simmer. Add the bay leaf and cardamom.
- Once the milk starts to thicken, add the sugar and a little jaggery to taste.
- Place the pancakes one at a time in the boiling milk. Cook over medium heat until they are tender.
- Once the pancakes have risen to the surface and the milk has thickened, remove the saucepan from the heat.
- Let it rest for a few minutes before serving.
